Parchment Paper

Parchment is a material for the pages of a book, codex or manuscript made from calf skin, sheep skin or goat skin. It is distinct from leather in that parchment is not tanned, but stretched, scraped, and dried under tension, creating a stiff white, yellowish or transluscent animal skin. It is very reactive with changes in relative humidity, sometimes causing books to leap from library shelves from the changes in tension, and is not waterproof. Cooking parchment paper (see below) is used in baking.

Chocolate Bowls

These are very simple to make. When releasing the air from the balloons, do it slowly so the bowls don't crack. They are delicious bowls to serve ice-cream, pudding or various other treats in.

Cream Cheese Pretzel Cookies

Someone was looking for this recipe and I became intrigued. I had tasted these also and loved them. I went on a hunt and looked at several recipes. I "cut and pasted" and put together a recipe that met the specifications. I made them and they were "The Bomb!" Note* Dough should be refrigerated at least four hours

Eggnog Cheesecake

This is a beautiful dessert. Especially if you go to the trouble of placing the cookies and ribbon around the outer edge of the cheescake. My family asks for this every Christmas, and my husband loves to take it to work parties for the rave reviews.

Grandmas Oatmeal Raisin Cookies

These are the best oatmeal raisin cookies. My grandma makes these all the time and I finally got the recipe and had to post! Perfect with a cold glass of milk! If you bake them on parchment paper, you dont have to spray the baking sheet so you can save calories for more important things! :)

Holiday Sparkling Fruit Centerpiece

Beautiful and easy presentation. When we were non kid we backlit the glass cake stand with low candles, now that we have our son we use a small standing nightlight set just part way under the cake stand to illuminate the centerpiece and keep it kid safe. Not knowing how large you'll make your centerpiece you'll have to guesstimate on the quanity of fruit needed. On occasion I also toast the whole walnuts and while still warm thread ( needle and dark thread ) them to look like pine cones without the jelly and sugar coatings.

Low-Fat Cajun-Style Fish in Parchment ...delish!

This is an adopted recipe that I haven't yet tried. The original chef comments: "The simplest foods often have the most flavor. This low fat Cajun flavored fish in parchment is a variation of a New Orleans' favorite. This easy recipe is made without oil or the dangers if cooking in an over heated cast iron skillet. Supermarkets stock several kinds if Cajun spice blends. Check the label to make sure the brand you choose doesn't list salt as the first ingredient, you can off set the the benefits of the dish by adding too much salt. Round out this meal with rice pilaf and a green vegetable or a spinach salad."
