Meat Ingredients and Recipes

Ham

Technically, ham is the thigh and buttock of any animal that is slaughtered for meat, but the term is usually restricted to a cut of pork, the haunch of a pig or boar. Although it can be cooked and served fresh, most ham is cured in some fashion. It is a common deli meat.

Soft Silken Tofu

Prosciutto

Prosciutto (IPA: [pro'?u??to]) is the Italian word for ham. In American English usage, the term is used more narrowly for a dry-cured ham from central and northern Italy. Varieties are also produced in other Adriatic countries. In British English usage, the term Parma ham is generally used as a generic name for this kind of ham, even if it is produced elsewhere outside the Parma ham Protected Designation of Origin area (see below).

Rump Roast

Kielbasa

Mortadella

Alligator Meat

Rabbit

Rabbits are small mammals in the family Leporidae, found in many parts of the world. They are sometimes affectionately known as bunnies or bunny rabbits, especially by children. There are seven different genera in the family classified as rabbits, including the European Rabbit (Oryctolagus cuniculus), cottontail rabbits (genus Sylvilagus; 13 species), and the Amami Rabbit (Pentalagus furnessi, an endangered species on Amami Oshima, Japan). There are many other species of rabbit, and these, along with cottontails, pikas and hares make up the Order Lagomorpha. Rabbits generally live for about 4-10 years.

Cottage Roll

Welsh Rarebit

It is made by grating cheese, blending it with beer or a little milk and butter, seasoning (particularly with mustard), and spreading the mixture onto hot toast; the whole is then grilled in the British fashion: that is, heated briskly from above (called broiling in North America). Classically the cheese used in Welsh rarebit is Lancashire, Cheddar or Double Gloucester, although Red Leicester is a popular substitute. The Oxford English Dictionary states that it can also be "simply, slices of toasted cheese laid on toast".

Nonfat Beef Broth

Ground Beef

Hamburger

A hamburger (in the United Kingdom and Saudi Arabia, the patty alone is known as a beefburger or burger) is a sandwich involving a patty of ground meat that is usually beef. The meat can be grilled, fried, steamed, or broiled, and is generally served with various condiments and toppings inside a bun baked specially for this purpose. Burgers are often served with french fries, potato chips, or onion rings. Hamburger can also refer to the meat itself. This type of meat can be used in boxed dinners such as "Hamburger Helper". Hamburger is actually a distinct product from ground round and other types of ground meat.

Corned Beef

The name corned beef is due to a coarse salt used in the pickling process. Corn originally meant grain, as in a small particle of something, and referred to the corns of salt.

Suet

Venison Steak

Bresaola

Ground Lamb

Sausage

A sausage consists of ground meat, animal fat, herbs and spices, and possibly other ingredients, generally packed in a casing (traditionally the intestines of the animal, though now often synthetic), and preserved in some way, often by curing or smoking. Sausage making is a very old food production and preservation technique. There is no consensus whether similar products that are not packed in casings, such as pâté, meatloaf, scrapple and head cheese should be considered sausages. Pieces of sausage—often not including casing—are a popular topping for pizza in many countries.

I make soup like this based on what's freshest, and what I have on hand. More of a technique than a real recipe, but always light and satisfying. You can use more ingredients than specified, but will need more broth, too.

10 Minute Szechuan Chicken

Submitted by: Easter Walker

This is a very simple recipe that produces stunning results. Szechuan cooking is usually pretty spicy, but this recipe is surprisingly mild. I like to jack it up a bit with some hot sauce, but my family doesn't like spicy food, so I do my own at the table.
